Cooking 29 ~ Sticky Date Pudding

Ingredients
2 cups of chopped pitted dates
2 cups of water
1 tsp of bi carb soda
100g butter unsalted
1 cup firmly packed brown sugar
3 eggs
1 1/2 cups self raising flour

Sauce
1 cup firmly packed brown sugar
300mls carton pure cream
200g butter unsalted

This is 1 dish that my husband LOVES as dessert. I have never tried as it always looks too hard & I never thought I could do it…

How wrong was I! ! This even tasted great as the mixture before it was cooked. It was very high in the middle when it came out but it settled down & flattened.

The sauce was great. Of course we had ours with cream on top.. Yummy!

For cupcake size use large lined muffin tins and cook for only 30 minutes..
